Morning Juice


I start off every morning with a glass of fresh made veggie juice — I’m actually drinking some right now. I have to admit, I wondered if I would find a veggie juice I could drink every morning, but this drink is magic. It’s sweet, it doesn’t taste like grass, and it’s not too much of any one thing.

Let me lay this out for you: I used to be addicted to orange juice. Seriously. I’d drink orange juice with pizza — and yes, I’m well aware of how disgusting that sounds. But after seeing what drinking fresh homemade juices made from a variety of fruits and veggies is like, I’ve given up orange juice. I might have a glass at brunch occasionally, I just don’t buy any at the store.

So what can my morning veggie juice do for you? Well… it contains carrot, beet, apple, celery, ginger, and sometimes beet greens or kale. It lowers cholesterol, blood pressure, inflammation, contributes to skin, eye, oral, and brain health, flattens the stomach, fights infection, and reduces your chance of heart disease, stroke, and certain cancers. Now tell me that’s not magic.

SO, here’s how you make this bad boy…

PREP TIME 15 minutes | MAKES 2 drinking glasses or 4 juice glasses

6 large carrots
¼ beet
1 granny smith apple
2-3 stalks celery
Snip of ginger to taste
1 cup greens (optional)


1. Wash all fruit and vegetables.
2. Chop into small enough pieces appropriate for your juicer.
3. Juice all ingredients.
4. Power off and unplug juicer, remove pulp to do a second pass.
5. Juice pulp.
6. Pour up and enjoy! Jar any remaining juice and enjoy within 2 days.
